Celery is known to contain useful phytonutrients, minerals and vitamins. Then instead of throwing away the celery base, you rinse it off and place it in a small saucer or a bowl of some lukewarm water on or close to a sunny window sill. You will want to have the base side down of the celery and the cut stalks facing upright. Then all you do is wait to grow your food. After about a week the surrounding celery stalks will begin to dry out significantly, but you will see tiny little yellow leaves from the center of the celery base begin to thicken, grow up and out from the center, and then turn dark green. The celery growth is slow, but you will see that it is easy to grow vegetables and grow your food.
Once the celery stalk has established roots, you can then transfer the plant into the soil in a container of your choosing.
Just make sure that whatever container you use has holes in the bottom of it for drainage. If there isn't enough drainage this could cause the roots of the plant to rot which can attract pests and cause the plant to die. Water the celery plant a bit every day and keep it in a sunny window, maybe even right in your kitchen where you can monitor its growth. Then, when you see that enough of a stalk has formed on the plant, you can then cut it off and eat it.

There are also other plants that you can replant from your kitchen scraps to save money and to make the most of your vegetables. You can do the same thing with romaine lettuce as you did with the celery. Just chop off the leaves of the romaine lettuce as you normally would and then you will take the bottom of the bunch and stick it in a glass or jar of water and place it in the sunshine. Chives and green onions also grow back the same way as the celery and romaine lettuce does.
